Ginger and Garlic Prawn Salad

Spring is in the air so are the salad and today I felt like a clean taste and nothing better than prawns with ginger I really think that they are a match made in heaven.

Let’s get cooking!

For two people

  • Prep Time : 15 minutes
  • Cook Time : 5 minutes



1/In your fry pan on a high heat with the corn oil add in the prawns, garlic and ginger chopped finely let in cook for 2mn turn the prawns over, add black pepper and let it cook for another minute. Put aside and let them rest.

2/In your salad bowls start with the dressing; put in the mustard and the balsamic vinegar, salt and pepper and start whisking until the mustard has completely dissolved in the vinegar, still whisking add in the oil in drizzle until your dressing become smooth and creamy.

3/Add in now the scallion tomatoes and avocado chopped, the prawns (peeled) and all the juices and bits from the pan where the prawns cooked (that is the best), the salad the chopped coriander, toss and voilà!
