This is comfort food at his best, with the very cold and dark evening this is what we want and yet still good for you.

For two people

1/ Place the broccoli in your pot trying to keep it as whole as possible, add one bay leaf sea salt and add some water about a third and cover. Cook on a very high heat for 5 minutes switch off and leave it aside.
2/ In an oiled fry pan on a very high heat place your chicken (cut in chunks) and your red onions (peeled and chopped very finely). Cooked them and let them take some colours for 5 minutes or until the onions start to caramelised, add salt and pepper, the bay leaf and switch of the heat. Add a small glass of water and make sure to scrape the bottom of your pan for all the lovely juices.
3/ now for the white sauce, in a pot on a low heat place your butter as soon as it melted add the flour and mix it with a wooden spoon, once the flour has absorbed the butter take a ladle of the beautiful juices from your pan where the chicken and red onion has cooked and incorporated in the flour one ladle at a time repeat until they is no more juices from the pan, then take the broccoli stock and repeat until you white sauce is creamy.
4/ Add to your creamy white sauce salt and pepper without forgetting the nutmeg, then the chicken pieces, red onion and half of the broccoli, mix in gently.
5/Pour in the mix in your oven dish and place on top the rest of the broccoli. Cover with mash potato, voilá!
