For this recipe the choice of meat is very important, the beef has to be “stewing beef” with marrow bone if possible for taste. For the peppers try to find BELL PEPPERS, once again for taste.
For 6 people

1/ In a pot, brown the meat, put aside.
2/ In the same oil as the meat (I use corn oil) add the cumin and coriander seeds, let them brown for 30 seconds, and then add the onions, garlic, ginger and peppers chopped roughly. Let them take some colour for about 5 mins. Lastly add the aubergines (cut it 3 times lengthways, then diced 10cm intervals), and cook for another 3-5mins.
3/Add the cumin and curry powder and stir for a few minutes, when the bottom of the dish becomes sticky and ingredients begin to stick, pour in the can of tomatoes, making sure to crush them and add the meat. Stir one last time.
4/Cook in the oven gas mark 5 (1700C) for 2 hours. Then stir in the spinach and place back in the oven for another 2 hours at gas mark 4 (1500C) add water if needed.
