1/ Take the asparagus and one at a time hold them from each end, bend them and they will break naturally where the woody part is.
2/ In your fry pan on a very high heat pour the oil and add the shallots peeled and chopped finely the asparagus the cherry tomatoes, halved and squeeze the juice all over, the pork chopped cut in bite size, the spinach, the bay leaf and the salt and pepper to taste. Cover and still on high heat let it cook for 5mn, remove the lid stir and still on high heat let it cook for another 5mn. Turn off the heat cover and let it rest for another 5 mn. As simple as that!
