So there it is a new year is upon us with all the resolutions and abstentions. Nobody said that abstinence has to come with a spoonful of insipidness so prepare your taste buds for a culinary delight.

- Prep Time : 15 minutes
- Cook Time : 60 minutes
1/ Place the lemon (cut in slices), and the bay leaves (reserve 2 bay leaves) in the middle of your salmon, season to taste.
2/ In you biggest saucepan add the white wine, the peeled and sliced carrot and bay leaves, season to taste. Place your salmon in the wine, cover and let it simmer for an hour minimum or until cooked.
I served my salmon on a bed of lamb lettuce and lemon wedges.
