For 10-12 people

- Cook Time : 10 Hours minutes
1/ Place you ham in the bigger pot you have cover with water and add the bay leaves, the onion and carrot peeled. then cover with water cook on a very low heat, the ham should be simmering at all time but never boil. Let it cooked for 8-10h. when you ham is cooked but still firm switch off the gas cover and let your ham cool down over night.
2/ in a bowl combine the honey and the mustard and rub you Christmas ham with the mix then place the star anise on the ham and cook in the oven for approximately an hour or until golden brown.
Serve with baby turnip and long stem broccoli. Voilá !
