I was given a challenge recently by a friend who does not eat fish, asking me to find a recipe to prove her wrong. Knowing her love for Italian food!
So here we are I can assure you than the combine flavours of the tomato,fish and pesto are just so!!!!( In this recipe I use the home made pesto from the recipe on the site of the 27th of September).

For 2 people
- Prep Time : 10 minutes
- Cook Time : 20 minutes
1/ In your oven dish place 4 slices of tomatoes cut (1 inch thick) season with the oregano, crushed garlic and salt and pepper.
2/ Place the cod fillets cut in 2 on the tomatoes slices smothered them with the home made pesto. in the oven for 20mn gas mark 6 .
