This is comfort food at his healthiest. You would not believe those sausages they really deserve the gourmet title. They are the” Whelan’s range of gourmet food”, the Sicilian sausages, you will not regret it. We are going to make a little wine gravy sauce…. Let’s get cooking!
For 3-4 people

1/ In a pot add in you potatoes ,peeled and cut, cover with water add some salt to taste, place your kale on top of the potatoes cover and let it all cook for 10-15 mn depending of the size of your potatoes. Drain and blend them with butter ,nutmeg and salt and pepper. Place the mash into an oven dish and sprinkle with parmesan. Let it cook for 20mn in the oven gas mark 6 (180 c).
2/ In a pan drizzle a teaspoon of oil and place your sausages and onions (chopped ) on a very high heat for 5mn with a lid on. Stir and make sure to repeat until the onions and sausages take some colours and that your fry pan start to caramelise at the bottom. Add now the white wine with the corn flour diluted in. Pour in and stir until it has thicken, then add the thyme, bay leaf, scallions and salt and pepper to taste. Cook slowly for a further 5mn let it stand for another 5 mn. Serve with your gratin.
