Gf Pasta with Home made Pesto

Alas! The sun is here with amazing blue sky, in the garden working hard with friend to cut back all the jungle. So after a hard working day nobody wants to spent too much time in the kitchen. And homemade pesto is so simple and has nothing to do with the shop one. This recipe makes a simple pasta recipe become “a meal fit for a king”, so what are we waiting for!

For 2 people

- Cook Time : 15 minutes
Ingredients
- Gf pasta - 200gr
- Baby tomatoes - 100gr
- Chestnut mushrooms - 100gr
- Oregano - a pinch
- Salt /Pepper - To taste
- Pesto
- fresh basil - a handful (stalk included)
- fresh baby spinach - a handful
- Pine Nut - 70gr
- Parmesan (grated) - 70gr
- Garlic - 1 clove
- Olive oil - 3-4 tbsp
- Salt /Pepper - To taste
Instructions
1/ In you food processor add in all the ingredients for the pesto and blend them together. Make sure to taste your pesto before adding the salt as the parmesan and garlic are natural salt enhancer.
3/ Take your fry pan on a high heat and add in the chopped tomatoes, mushrooms, Parma ham, garlic and a pinch of oregano, salt and pepper to taste. Let it cook for 3-4 mn. Put it aside.
4/ In a pot of boiling water, remembering that Gf pasta have to be boiled in more water than the wheat pasta, put in you spaghettis and keep on stirring until the water boils again. Little hint, I always use 2 forks to stir the pasta making sure that they do not stick to each other.
5/ When the pasta are cooked drain them stir in the pesto (only half of what we made, you can freeze the other half or keep it in the fridge for another week).place them in your serving dish and add the on top the mushrooms, tomatoes and Parma ham.
