Ham and leek roulade

For this recipe the quality of your cooked ham will make a huge difference, do not hesitate do go to the counter and ask for a large and thick slice of ham!

for 3 people

  • Prep Time : 30 minutes
  • Cook Time : 20 minutes



1/ Take your leeks, remove the outer leaf and cut them length ways keeping the green top. Wash them, put them in a pot of salted boiling water with the bay leaf and cook them for 10-15mn, making sure to retain the water for the white sauce.

2/Melt the butter in a pot, then add the flour and start to whisk energetically. When the flour has absorbed the butter add a ladle spoonful at a time of the water where the leeks cooked (instant veg stock)keep on repeating until your white sauce is runny but not watery.

3/ Add the nutmeg, salt, pepper and cheese to taste. Cook it for a further 5 mn at low heat. 

4/ Drain the leeks and press them hard to take as much water out as possible.(keep the remaining water from the leeks to cook the rice in it)

5/Take your slices of cooked ham and one by one place some leeks in the middle and roll them onto an oven dish.

6/Pour the sauce over the ham roulade and cook in the oven at a very high heat - gas mark 7 (2100C) for 20 mn or until the top is golden brown.

Serve the roulade on a bed of rice
