This recipe is one of my favourite; it is wholesome, low fat and absolutely delicious. What else do we need for the summer? Let’s get cooking!
For 4-6 people

- Cook Time : 1h 30 min
1/ Take your onions and peppers and slice them medium size, you do not want them to disappear in the casserole completely, especially for the courgettes you want to slice them minimum an inch thick, as for the garlic chop to your likeness but not crush.
2/ In your pan on a very high heat put in your turkey thigh, with no oil, skin side first until golden brown, 5-10mn depending how high is your heat. Turn the turkey and the same for the other side, take the beast out and let it stand.
3/ Turn down the heat to medium and add in all the veg, stirring now and again until they start to brown (10 mn). Add in all the herbs, tin tomato (rinsed with water) white wine (opt) and salt and pepper to taste. Place the turkey on top, cover ,let it cook in your oven gas mark5(1500) for 45 mn and if possible let it rest for 15 mn, you will taste the difference.
