Rhubarb & apple compote with Natural Yogurth

With the summer (supposedly here) rhubarb is growing and delicious. So let’s get cooking!
We are going to start with the easiest recipe the compote. I like mine with apple to cut the sharpness.
For 4 people
- Prep Time : 15 minutes
- Cook Time : 15-20 minutes
Ingredients
- Rhubarb - 500gr
- Apple - 250gr
- Vanilla pod - 1 (fat one)
- Brown Sugar - 250gr
Instructions
1/ In your pot add in the rhubarb, previously peeled and cut into little pieces, then the apples, also peeled and cut into pieces.
2/ Add the vanilla pod previously cut in half, I do not scrape it yet. Cover with the sugar and let it rest for 15mn until the fruits released their own juices. Cook it on a medium heat until it start to bubble then turn the heat down and cook for a further 15-20mn.
3/ when your compote has cool down take the vanilla pod out and scrap(easily) the vanilla out and mix in gently back in your compote.
Serve now with the yogurt (or not) and enjoy!
