For this recipe the pork belly should be meaty and make sure to get your butcher to score the skin on top, for the fat to render while cooking.
For 4-6 people

1/ Place the Pork Belly rubbed with sea salt in an oven dish gas mark 4( 1200) and cook it for 2 and half hours. Let it cool down in the oven for another 30mn.
2/ Separate 6 of the outer leaves of the lettuce to use as an individual bowl, place them on your serving plate.
3/ In a bowl chopped finely length ways the shallots and the rest of the lettuce, combine with the mayonnaise and ketchup, fill the lettuce bowl with this salad mix.
