For this recipe I used untreated lemon as we are using the rind. This year is a lemon year: they are sweet and very juicy.
So this is the first of the lemon saga!
For 6-8 people
- Prep Time : 20 minutes
- Cook Time : 5 minutes
1/ In a bowl combine the juice, the rind of the lemons and the sugar. Whisk energetically until your mix become fluffy.
2/ In a bain-marie put your bowl and eat up the mix until the sugar has dissolved, then add one at a time the yolks and keep on stirring until your mix start to thicken and become creamy (5mn approx).Let it cool down.
3/ Whip the egg white and fold them into your creamy mixture, for the best result add a spoon of the white to start to air the mixture and only then fold in the rest. Let it set in the fridge for two hours.
4/ whip the cream and combine gently with the lemon mousse, put it back in the fridge for another 2 hours.
Here you have a beautiful fresh and creamy dessert.
