1/ In your pan at a very high heat brown the meat cut to pieces. Put aside.
2/ Still at a very high heat put in the onion sliced length-ways, as soon as they start to brown ,add the aubergine chopped in little cubes, the scallions, the garlic, the thyme and stir for 1-2 minutes then reduce the heat.
3/ Add your pork the honey, vinegar and the soya sauce. Cover it and let it cook for a further 15mn.
