For this recipe I used fresh tuna but any other fish will be as nice.
For 4 people
- Prep Time : 20 minutes
- Cook Time : 30 minutes
1/ Brown the fish on high heat rapidly on each side, remove the fish from your pot, put aside.
2/ Add the onions,garlic and pepper finely chopped until they start to color, only then add the aubergine (finely chopped),bay-leaf, rosemary, salt and pepper until they start to stick to the pan.You are ready to add the tinned tomatoes, honey and the wine(optional).
3/ Lower the heat and let it reduce for 30mn. Put the fish back in the pot and cook for a further 10mn.
Serve it with boiled potatoes or rice.
